Compare where we were almost six years ago to today - back in 2018 we were still a two man setup, brewing on a ramshackle kit in Polly's old stable; dreaming about days in the future when we would be able to have our pick of whatever hop combo we wanted in our beers. Today, we're a sophisticated, modern brewery with a team of twelve incredibly talented individuals, and we're pretty much carte blanche with whatever we want to use when it comes to the freshest hop varietals. With this in mind, we brewed What We Haven't Got Yet for those two starry eyed dreamers that begun this whole journey - a simple hop bill of the freshest crops of Citra and Nelson Sauvin, but positively bursting at the seams with fresh gooseberries, overripe mango, white wine grapes, and freshly chopped pink grapefruit.
