Westmalle Extra (4.8%) The golden blonde Westmalle Extra is only brewed twice a year, primarily for use within the abbey. Westmalle Extra is the table beer served to the monks and their guests and is brewed with water, barley malt and hop cones. The Westmalle Dubbel and Tripel yeast is also used for this beer. Westmalle Extra is also top-fermented but it is considerably lighter, at 4.8%, alcohol-by-volume than its brother brews. It has the characteristic Westmalle aroma with hops coming through in the finish. It is a real thirst-quencher.
Westmalle Dubbel (7%) is a dark red-brown beer with a rich, complex taste thanks to re-fermentation in the bottle. You pick up touches of caramel, malt and fruity esters reminiscent of ripe banana. The beer pearls beneath a covering of dense, cream-coloured froth. A lovely lace pattern forms on the inside of the glass once emptied. The long, dry finish of this balanced, mild Trappist beer will stay with you.
Westmalle Tripel (9.5%) Was first brewed in 1934 and the recipe has not changed since 1956. It is made with pale candy sugar and has a very pale color produced from a mash of light pilsener malts. Styrian Goldings hops are used along with some German varieties and the classic Saaz pilsener hop. After a long secondary fermentation, the Tripel Westmalle is bottled with a dose of sugar and yeast. This beer holds up well in the bottle over time and seems to soften with age.
