Ah, Citra and Simcoe. The pairing that has followed this brewery all the way from a two man setup brewing once every eleven days on a rickety, retrofitted wood-bound brew kit, all the way to where we find ourselves today - in a modern, sophisticated brewery and capable of brewing up to eight times a week. Whilst this pairing has gone through different iterations throughout our relatively young history, there’s a reason it’s always been our favourite - the depth and complexity these two hops bring to the table by themselves is worth their use alone, but as a duo, there’s something else they do together that just works in our beers. Expect a whole host of complex stonefruit, pine and citrus zest aromas backed up with just a hint of berry, apricot and passionfruit.
