We've hooked up with our pals down in Cheltenham, Deya, to bring you this new, venturous and bold Triple India Pale Ale.
We started with a malt base consisting of extra pale malt, and flaked oats, double mashing at a slightly higher temperature in order to acheive a higher finishing gravity, bringing a touch more sweetness in order for the beer to carry the weighty dry hop with ease.
Idaho 7 + Citra CRYO hops were used in the whirlpool for a gentle bitterness and to boost their incredible, tropical aromas. We fermented with Kveik yeast, paying close attention to its pitch rate, attenuation and its finishing gravity to ensure the smoothest body possible and to further boost the intense tropical profile of the beer. We finished with a hefty dry hop of Lotus, bringing big orange, vanilla cream, strawberry and a touch of bubblegum flavour. Idaho 7 Cryo brings sticky pine to the party along with unripe sherberty mango whilst hop Citra finishing with a sprinkle of lime and dankness.
