Every now and again, you've just got to head into your hop store, take a look inside and go "Yep, we should throw loads of different varietals together". The cheekily named Totally, Not Enormous takes this pretty literally and features our brew team taking a boatload of five (count 'em, five!) different hops and cramming them into a huge DDH IPA. Letting Amarillo take the lead on this beer with all its floral, tropical, and orange notes, we've adapted our pyramid technique to bulge the middle section with three varietals at 10kg instead of our usual one, with additions of Galaxy, El Dorado, and Citra adding a metric tonne of juicy stone fruit flavours, before rounding out with a 5kg addition of Mosaic to finish everything off. Big, bombastic, juicy, and 100% Polly's.
