We've gone full craft beer circle in the brewery - hazy to sour, sour to imperial stout, imperial stout to lager. When we were planning The Sun's Come Up, we tossed and turned between sticking to the Vienna style we'd tread the path of previously, or going completely out of our comfort zone for a clear-as-a-bell Pilsner. After a particularly intense game of rock, paper, scissors, the latter took the space in the brew plans. Brewed as a passion project by our senior brewer Matt to embrace his love of the classics, this beer spent six weeks cold conditioning in tank, with light additions of Mittlefruh and Cascade for a bready, crisp, refreshing, and drinkable lager. A shameless homage to the great brewers of Europe.
