This IPA takes inspiration from DIPA v20, using two different yeast strains; lager yeast Diamond and finishing with Lallemand Verdant ale yeast to attempt to release these thiols into a grapefruit thiol/ester flavour profile. This results in a lighter body with a gentle haze, making for an easy to drink, almost classic-styled IPA.
Cashmere spearheads the hop bill in this 6% IPA, providing a foundation of sweet melon and ripe stone fruit. These notes are layered over a complex base of Talus and Sabro Cryo. Sabro contributes its characteristic tropical flair and coconut cream, while Talus introduces a distinctive resinous woodiness that elegantly balances the finish by cutting through any lingering sweetness.
