Sometimes our favourite thing to do here at the brewery is take a look back at some of the beers we've absolutely vibed off over our last three years, and smash them together to create a wonderful hybrid of the two. Our Azacca Mosaic DIPA from our dearly departed Originals range is something we've been meaning to get back to for a long time now, but looking at the dry-hopping rate back then, we'd barely register a pale with it. Our brewers duly decided to ramp up proceedings to double the amount, as well as smashing a Citra and Simcoe addition to things, because why not? The result is Step Inside the Panic Room - Mosaic takes the lead with juicy orange and blueberry notes, before smaller additions of Azacca and Simcoe bring huge notes of mango and tropical fruits, before mellowing out with a pleasant pithy bitterness from Citra. Awesome.
