This beer represents the finale of the first four barrels we purchased to kick off the Spinning Mill Barrel Project, and represents something delicious, different and creative.
We chose the Brandy barrel for our delectable base imperial stout to reside, seven different malts and 25kg of muscovado sugar, all creating a silky sweet stout base - vanilla, brown sugar and red berries on flavour and aroma.
Wild fermentation has then added a tart, slightly acidic edge to the beer - one that will become more pronounced with aging - but adding to the red berry flavour.
