Fusing traditional styles and techniques with modern brewing advances is something that excites us at balance. For this beer we worked with BarthHaas to utilise Spectrum, a liquid hop extract, that we used to dry hop a blend of barrel aged saisons.
We got our hands on Ernest and Fuggle in Spectrum form, two British hops that work wonderfully in our beers. There's a tropical punch of flavour: mango, pineapple and pomello carried on a base of subtly bready malt and the pithy bitterness of pine pollen.
