We are delighted to present the 2025 edition of Cloudwater's Christmas Barrel Project Releases.
A collaboration with our friendsGorilla Brewing in South Korea. An exploration of barrel characters, landing on the subtle notes of Soju barrels. We aged a bright, zesty sour in these unique casks, allowing the beer to pick up the smooth, delicate spirit character. A gentle, rounded minerality and leading to a complex, refreshing, and entirely new sour experience.
