SERRATA

We continue to celebrate American Craft Beer Week with the re-release of Jester King Serrata — barrel-aged wild beer with Japanese Red Shiso, brewed in collaboration with Gigantic Brewing in Portland, Oregon.

In March of 2021, we brewed with well water, Texas-grown malted barley and wheat, Amarillo hops, and Red Shiso. After primary fermentation in stainless steel with our mixed culture, we barrel-aged the beer in neutral oak for about a year. We then blended and naturally conditioned through re-fermentation in the bottle. 6.3% abv.
