We met Adrian from Cervecería Paracaidista in Chicago through the Pilot incubator project and we discussed making this crazy tepache inspired pale ale. All the joy of a juicy IPA with the novelty of sour Pineapple, spicy chilli and a background of brown sugar and subtly mixed spice. Something completely different. Enjoy with a dash of Tajin.
