Saison I

Saison is brilliantly golden yellow in colour with a robust meringue like foam. We fermented at cooler temperatures to reduce the classic Saison esters - expect more citrus than banana/bubblegum and some spice from the yeast accentuated from additions of freshly crushed coriander, pink peppercorns and grains of paradise in the whirlpool alongside some European noble hops. Full bodied and rustic qualities from the spelt and buckwheat make for a dry and super refreshing finish with a touch of bitterness.
