
The second beer in our Reincarnazione series that uses spent fruit from other projects in a new wild ale.
The cherries and raspberries come from Rouge released last autumn. The Belgian cherries are rich and tart, the Norfolk raspberries hide a little behind the cherry but are tangy and jammy.
The pinot noir skins joined the blend in September last year. We picked up the pomace from @gutterandstarswine in Cambridge and added to the beer for refermentation. The pinot noir grapes were grown in Crouch Valley, Essex. The skins, still saturated in pinot noir juice, bring lots of juicy red grape and light tannins.
All together bursting with red fruits, medium acidity, light tannins and a refreshing dryness.
