For this recipe, we partnered with Zagovor, who are at the fore-front of Russia’s craft beer scene, to brew a 9.1% DDH DIPA. Taking everything we learnt from OFS024, our Quad IPA, we set out to recreate that big, bold flavour in a slightly lower ABV beer. The extensive hop bill includes Strata, Simcoe, Citra Cryo, Citra Incognito, Cashmere and Idaho 7, which blend to create huge grapefruit and tropical character backed up with a distinct bitterness, with a touch of lactose for a creamy mouthfeel. We’ve also used Hornindal Kveik yeast which provides distinct mango, pineapple and stone fruit notes – a real triple threat of a DIPA.
