Inspired by the latest advances in hop delivery in the form of Incognito, we decided to see what it could do in an old school West Coast Double IPA. The Incognito allowed us to hot side hop at the equivalent of 10g/l, packing the liquid with silky, resinous hop oils. We then dry hopped with Simcoe, Ekuanot and Mosaic which bring citrus, herbal and piney notes before a long yet smooth bitterness.
