After a short period of fallow time, our in-house DDH Pale series returns once again, with Murmurations headed up by our second ever employee at the brewery, our very own Scott. Taking the reins entirely from recipe to artwork, Murmurations features a technique employed by Scott known as "hop bursting"; multi-layering the whirlpool hops to accentuate his dry hop bill of Mosaic, Simcoe, Azacca and Enigma. Gradually adding a small amount of Mosaic at 100 degrees, before dropping the whirlpool down to 87 degrees and adding his main whirlpool addition of Simcoe, the result is that each individual varietal is distinguishable throughout - possibly our most crushable DDH Pale yet.
