Mole Poblano

Crisp air and falling leaves blanket the country, spooky ghouls fill the streets and crackling bonfires ignite the night sky. Autumn is well and truly upon us, so this month's edition of Volumes looks to combat with a real warming treat, inspired by Mexico's legendary Mole Poblano Sauce.

Smokey, warming chilli notes are tempered with bittersweet cocoa and sticky date for a rick, indulgent stout with just a little bite. Subtle fruity notes of redcurrant and anise from liquorice provide a depth of flavour. A creamy and sumptuous mouth feel is rounded out with a subtle warmth to deliver a little trick and a lot of treat.
