Throw back to three years ago; a time when we had a strict policy in place that we'd never attempt a style new to us unless we learnt from a brewery that favoured that style, or if we brought on an expert who excelled at producing them. We brought in our head brewer Lally specifically to allow us to add a couple of branches to our output, and the very first beer he produced here at Polly's was Kirschentart. A beer that made our sour beer wizard's eyes light up when we told him there was a gap in the brew plans to make anything he wanted, we wanted to come back to the OG Polly's sour, and give it a distinctly 2022 treatment. Simplicity is key here - a straight up cherry gose, using 125kg of sour cherries, paired up with 1.5kg of locally sourced Halen Mon sea salt, this beer is puckeringly tart, and refreshingly delicious.
