It’s become an in-joke within the brewery here at Polly’s at this point; the never-ending quest to create a West Coast IPA that we can confidently put in front of our notoriously fussy head of sales and find no fault at all. More bitterness, clearer, heavier on the malt character, less dry-hopping - we’ve decided to rip up the Polly’s playbook when it comes to Westies and come at it with a new approach; we’re talking about an adaptation of the world-renowned 60 minute IPA technique perfected by Dogfish Head way back in the 1990s. With repeated additions of Comet on the hot side at the 30, 15, 10, 5 and 1 minute mark on our boil, along with an extra final addition during our whirlpool process, this beer hits every classic West Coast IPA checkmark. Crystal clear? Yup. Crisp and refreshing? You’d better believe it. Bitter? Absolutely 100%. So good that we put it in front of our head of sales and he was literally lost for words - we’ve just checked this style off as completed.
