This is made from some heritage varieties of barley. These different varieties were grown
together in the field as a diverse polyculture – sometimes refered to as a population – along
with some wheat, rye, oats and other grains. These grains can be grown in a way in which the
farmer does not need to use fertilisers, nor pesticides, herbicides and fungicides, and in a
system which can build soil. It’s a look to the past, but could also be a future of grain
production.
The grains bring a lot of complexity and depth to the beer, which has more sweetness, gentle
acidity, and plenty of interesting fermentation aromatics
