Wheat malt is an important and typical flavor carrier for this beer variety. Just as with other beers, we work with a slightly higher original gravity of 12.5 % when brewing Rothaus Hefeweizen.
Aside from the light bitter hop flavors (13 IBU’s), Rothaus Hefeweizen has an additionally important flavor component that’s typical for this variety: brewer’s yeast. For this beer variety, a top-fermented yeast is used as opposed to one that’s bottom-fermented. In contrast to our other beers, our Hefeweizen is unfiltered when bottled.
