The beer itself was inspired from the Penicillin Cocktail: a smoky, spicy mix of Scotch, British Black Bee Honey, ginger and lemon. Dr Todd is our riff on the cocktail that combines all the ingredients which have have reconstructed from the drink and then rebuilt back up into a beer. It's a beer we had always wanted to make... The end result is an Islay Whisky Barrel-aged, strong citrus sour. It’s been brewed with ginger and aged in Islay barrels with British Black Bee honey, which is raw, unpasteurised and incredibly unique, it's then finished with more ginger and lemon zest to give it a lovely bite.
