Yes, it can give rise to apricot and vanilla esters in our New England style beers, but it can also produce extremely clean and crisp sessionable ales, almost akin to a west coast yeast. It was this malleability that led us towards the concept of\u003cem data-sleek-node-id=\"osFaaw\"\u003e\u003cstrong data-sleek-node-id=\"N64A0e\"\u003e\u003cspan\u003e \u003c\/span\u003eDisco Italiano (Pale Ale 4.8%).\u003c\/strong\u003e\u003c\/em\u003e\u003c\/p\u003e\n\u003cp data-sleek-node-id=\"1ilBmA\"\u003eAlong with Agostino from Birificio Italiano, we devised a recipe that marries two distinct styles: Italian Pilsner and Cask Pale Ale. A true collaboration that has resulted in a clean, crisp, dry and refreshing Pale Ale that has a noticeable herbal hop character from the UK-grown Hersbrucker hops.\u003c\/p\u003e\n\u003cp data-sleek-node-id=\"tXZ567\"\u003eWe achieved this by taking our base Helles recipe, inclusive of step mashes and a little mash out decoction, swapped in Golden Promise malt for the paler pilsner malt we would normally use and hopped it heavily with the wonderfully herbal and woodsy Hersbrucker.
