Packed full of Scottish brambles (that’s blackberries for those south of the border) with their mouthwatering sharp flavour and ‘wild’ tang. We love this berry in our mixed-culture sour base!
To contrast the bright sherbety character we decided on the chocolatey, roasty flavour of coffee.
We gave our friends at @cliftoncoffee a shout with our requirements and did they deliver! A single origin coffee bean from their own farm in Brazil. Loaded with heavy chocolate, toffee and toast aromas. To really allow these beans to shine they timed their roasting schedule to our fermentation for the ideal moment that the coffee would be at its best for our beer. Just 3 days from roasting!
