This is the third edition of our robust red beer, Clomp. Strong red worts were made from crystal and roasted malts, augmented with a significant addition of dark brown cane sugar. Aged hops were used in the boil to allow a good balance between yeast and lactic acid bacteria during the spontaneous fermententation. This blend was made from two brews fermented in two red Bordeaux barrels, produced in March 2022 and February 2023. The finished blend was dry-hopped with whole leaf Barbe Rouge from the latest harvest, used to work with and elevate aromas of red berries, earth, and spice we had tasted during blending. The finished beer starts rich and sweet, with red fruit flavours, and finishes with more juicy acidic fruit, and a touch of dry cocoa.
