Chimay Bleue is a dark beer that gets better over the years. It combines aromas of fruit and chocolate, which transform into a sweet mocha with a spicy character.
Since 2015, Chimay has been honoring an ancestral method; proceed to a second fermentation of the Chimay Blue in wooden barrels.
This method provides exceptional flavors and a complex taste that varies according to the type of barrel used. This beer also goes through a third fermentation in the bottle.
The Grande Réserve barrel fermented is placed in a black bottle to improve the aging potential of the product. It is even better to taste with its special glass.
Bourbon Edition
The 2026 barrel-fermented Grande Réserve was matured in barrels that previously held Willet Pot Still Reserve Bourbon, resulting in a powerful and flavorful beer with an intriguing complexity. Its aromatic profile opens with intense notes of oak and vanilla, supported by warm touches of caramel. Subtle spicy fragrances of blackberry and date lend depth and elegance. A powerful taste then enhances this rich bouquet. The oak character is fully expressed, in perfect balance with the sweet flavors of caramel and vanilla. The alcohol gently warms the whole. A gentle bitterness and some smoky notes bring liveliness and balance. The finish is warm and creamy, slightly bitter and fruity.
