We profess our love for Simcoe pretty regularly here at Polly’s HQ – despite having been around the block a few times, there’s a reason this varietal remains as popular as it is; bringing some seriously punchy fruit flavours to the table, and consistently being a dream for our brewers to work with. When we found our we’d be getting a shedload of Loral into the brewery as part of our hop contract this year, it made the most sense to pair up the super high pineapple sweetness of this new-to-the-brewery varietal with one of the in-house favourites. The result is an IPA with the high juice characteristics we’ve become so accustomed to, backed up with enough complexity to maintain maximum drinkability.
