A Black India Pale Ale, or Black IPA. Yep! The concept we came up with (which was new to British craft beer in 2012) revolved around the old chewy sweets ‘Black Jacks & Fruit Salads’. We wanted to take a big, fat IPA, lace it with undertones of roast coffee and aniseedy liquorice and blend with the huge tropical aromas of Pacific West coast hops. Columbus for hints of black pepper and more liquorice, Chinook for grapefruit and Citra for extra grapefruit and mango. The Carafa malts from Germany give us the dark colour and roastyness but minimal bitterness, letting the hops fly and fly! Oh and yes – it is named after the song!
