The malt used for Islay whiskies is traditionally dried over a fire stoked with peat, the only fuel on the island. This gives the whisky its typical smoky medicinal aroma and flavour.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThis taste and smell, together with hints of chocolate and coffee from the Imperial Stout, are also amply found in this beautiful Barrel Project.
