"Being in Scotland is definitely beneficial when it comes to sourcing barrels and knowing exactly what was in them. We’ve had the opportunity to really pick exactly what we wanted for our first Barrel Aged Plain Dark Beer. We used 4 barrels that previously held: 6 year old Ben Riach (a sherry octave), 24 year old Macallan, a 19 year old blended Speyside malt (a sherry butt) and a 52 year old Bonnington grain whisky. An added bonus for us is that the Bonnington distillery was a Leith based distillery that was less than a 5 minute walk from where Newbarns is now. Although the distillery has been closed for a long time, we’ve managed to end up with nice little collection of the barrels for use in the future. Barrel aging in such old casks definitely makes for a much smoother and richer profile than usual."
