INITIALLY BREWED IN THE SUMMER OF 2021 WITH A WHOLESOME BLEND OF WHEAT AND OATS, CAREFULLY SOURED WITH A BLEND OF LACTOBACILLUS AND OUR HOUSE YEAST. RACKED INTO FRESHLY EMPTIED CHARDONNAY CASKS, ALONGSIDE SUCCULENT PEACHES AND APRICOTS. THE ADDITION OF THESE FRUITS TRIGGERING A SECONDARY FERMENTATION IN BARREL, IMPARTING EVEN MORE DEPTH TO AN ALREADY INTRICATE BASE.
The resulting brew is bright and tangy, with a rich, fruity bouquet dominated by the ripe juiciness of the peaches and apricots. Balanced by the warming flavours of oak and gooseberry for the barrels. Smooth and medium-bodied with a crisp, dry and slightly tannic finish.
